Top Tips

Working with Phyllo dough can be frustrating once it gets to room temperature. It's best to keep it cold, taking pieces out as you're making each group of tarts.

Use fresh herbs to really bring out the flavors of the other ingredients. This book about herbs is where I go to see what pairs best.

The tomato tarts are paired with fresh parsley, dill is paired with the fish tarts, and watercress would be a wonderful addition to any of these mini tart recipes.

I got an Aerogarden for my birthday so I always have fresh herbs and peppers. Even someone with no green thumb like me can grow their own herbs easily!

Sprinkling chopped herbs over the tarts or a couple of stems around the plate makes your appetizer look elegant, as well.
